Scrambled Tofu

    1½ tablespoons peanut oil
    1 pound tofu
    juice of ½ lemon
    salt and freshly ground pepper to taste
    1 medium onion, peeled halved, and thinly sliced
    ½ pound snow peas, ends and strings removed
    ½ teaspoon dried thyme

  1. Heat oil in uncovered wok at 350°F.
  2. Add tofu; gently stir-fry 2 minutes.
  3. Add remaining ingredients, stir-fry 2 minutes. Serve immediately.

    Makes 4 servings.
